How to Make Spicy Sweet Potato Soup with Ginger

Here is the step by step process of making sweet potato soup with ginger. This soup is a healthy recipe.

Ingredients:

2 tbsp oil
2 sweet potatoes
2 onions
1 tsp chopped garlic clove
1 tsp chopped ginger
2 tbsp sherry vinegar
4 cups vegetable broth
100 ml whipping cream
1 pinch cinnamon
75 grams goat cheese
1 tsp pepper
2 tsp spring onions
Salt as required
Oil as required

Preparation:

1. Cut the onions into small pieces. Kept them into aside.
2. Peel off the sweet potatoes. And cut them into the small cubes. Kept aside.
3. Chope the spring onions.
4 Heat the pan with oil. Then add the chopped onion and sweet potatoes. Saute well cook for few minutes.
5. Then add the vinegar and vegetable stock. Cover with the lid, reduce the flame to simmer. Cook for about 15 minutes until the sweet potatoes become soft.
6. Puree the soup with a hand blender and mix in the cream and a little liquid broth or milk until the soup has the desired consistency.
7. Bring to a boil again and season with salt, pepper and cinnamon.
8. Ladle the soup into bowls, crumble some goat cheese over the top of the soup.
9. Garnish with spring onions and serve hot enjoy.
